When Life Gives You Onions – Make a Meal

Anyway, I really like caramelized onions. When we do summer barbecues I always slice up a bunch of onions and mushrooms and then cook them as an accompaniment to the main dish. Over time I’ve experimented with adding various seasonings to the mix. I have often joked that I would be happy to eat the onions all by themselves.

When I was in the UK last month I was really careful about what I ate and managed to lose 10 pounds or so. Now that I am back at home, I’m still doing my best to head in the same direction. Last week I decided to simply cook up some onions!

I took an onion and sliced it up nicely. I heated up a pan and put in a tiny bit of olive oil, tossed in the onions, and set the heat between low and medium. Next I opened up our spice cabinet and found some seasoned sea salt, some dill, and a couple of other things., which I tossed in. I kept the heat reasonably low, stirred it around a few times, and let it cook. After 15 or 20 minutes it was almost ready to go — the onions were soft and brown. I put a tiny bit of shredded cheese on top, let it melt, and it was ready to go.

It was hot, tasty, and very filling.

Since then I’ve made this lite meal 2 or 3 more times. This morning I used some sweet onions and they were delicious.
